Thank you, New York City for finally providing us residents with a pleasant day of sunshine, warm temps and blue skies. I enjoyed this gift by lying in the grass in Central Park, sipping a soy iced coffee and reading a book.

Happy Mother's Day to my wonderful Mom. I will forever be thankful for my toaster strudel's with my name written on them in frosting. I love you more than you know.

Today was a super long day. Having nothing to do at work and filling your time sorting spare watch stripes by color and size is more torturous than watching the Lifetime movie, William and Kate.

A pair of neon pink oxfords (as seen on Pixie Lott above) would have done just the trick to lift my spirits. Instead of sulking about in Monday blues I decided to be productive and make the most of my day.

This included cooking...

I'm recently become obsessed with the blog Oh She Glows. This chick creates the most inspiring healthy, vegan recipes. Tonight for dinner (and lunch the remainder of the week) I made a Red Quinoa Black Bean & Avocado salad. It was easy to make and super filling. Tonight I added shrimp, you know, just for kicks.

I also made No Bake Peanut Butter Glow Cakes. Super easy and great for a mid-day energy boost.

Lately I've had this random interest in Chia seeds. I find myself adding them to everything. They are SO good for you and proven to reduce blood pressure, inflammation and they even have more Omega-3 than salmon. Imagine that!

To end my day on a happy note, I came home to my new Top Shop bathing suit that arrived in the mail. Now all I need is a tan.

Life in New York is very hectic, fast-paced, and even uptight at times. Although I hate to admit it, I find myself missing the carefree, west coast lifestyle. I miss Arizona and the pool parties, patios, skateparks, grass, and palm trees. More specifically I miss the long-haired, tattooed, disheveled skater boys that make up Arizona. As much as I try to convince myself otherwise, I just don't think I'll ever really "click" with a preppy, midtown banker who plays lacrosse, wears Lacoste and frequents rooftop happy hours, (THE EXCEPTION BEING DREW ADAMS) :)

What can I say, I'm a sucker for greasy hair, scabbed up elbows and torn jeans, shoes, shirts...

Needless to say, I'm looking forward for a visit home in May for a little R&R. Oh, and don't let the title of this blog fool you. I do in fact LOVE New York and am only referencing a Coconut Records song called West Coast.

Today was seemingly the first real day of spring. The moment the temperature reached 75 degrees all of New York City seemed to emerge from their winter cacoons baring their arms, legs, toes etc. Every restaurant that had a patio was on a wait and fruity drinks and cold beer were flowing. The streets were packed with joggers and on my walk home I even bought a mango. A mango in which I have now stared at for 20 minutes, knife in hand, trying to figure out whether it will be necessary to google, "how to cut a mango."

I'm back from the Berkshires peaceful and rested. Sunday night means a glass (possibly two) of red wine and movies. Anything to prolong the inevitable... that is MONDAY.
